1 pound ground lamb, room temperature
½ cup pitted Kalamata olives, whole or cut half
½ cup gluten-free breadcrumbs or gluten-free Panko crumbs
2 TBSP Dijon mustard
2 TBSP fennel seeds
1 TBSP dried thyme
Salt and Pepper
2 TBSP vegetable oil
Mix ground lamb with olives, breadcrumbs, and spices. Cover with plastic wrap and refrigerate for one hour.
Remove from fridge and let come to room temperature, about one hour.
Heat skillet with 2 TBSP vegetable oil. Form small patties with hands. Cook in two batches.
Great with other breakfast foods.
