I’ve liked chai for ages, drinking it cold and hot. It’s my go-to drink at coffee shops. On a recent visit to Zingos, they had gluten-free chai cupcakes. I was ecstatic to have a gluten-free dessert. And it tasted so amazing I had to try to make them myself. I used the gluten-free yellow cake mix from Aldi and added the chai spice combination from the Carol Fenster cookbook 1,000 Gluten-Free Recipes. I also added the spices to the frosting and substituted cream cheese for sour cream.
