While at Fresh Market, I found Thai Chili Aioli from Terrapin Ridge Farms. I slathered salmon fillets with it and rolled them in gluten-free bread crumbs before sauteing in a skillet. Delish! I can’t wait to try some sandwich combinations with the aioli.
I made cheddar jalapeno biscuits. I was pleasantly surprised by how they turned out, considering it was the first time I made a biscuit using coconut flour.

I made pumpkin pie hummus and tried it on hummus chicken. This is the second time I’ve made hummus chicken with a hummus that doesn’t use garlic or tahini. It’s OK, but not something I’ll jump for. So I think that I will only use hummus that has garlic and tahini for my hummus chicken. Check out the recipe here.

I never expected myself to try time-intensive meat dishes, but you know what, I rather enjoy them. I’m spending more time in the kitchen anyway, so why not? I’ve had a lot of fun learning how to cook since February, and it’s great to experiment and find hidden gems. This brisket is amazing! I used potatoes as well since I had some leftover from another experiment.
