Reuben Pasta Casserole

I found “Gluten-Free Pasta” by Robin Asbell when I was in Cincinnati and stopped at Joseph-Beth Booksellers. And I found a Reuben pasta casserole, similar to my recipe for tuna casserole. I gave it a try, and even though I forgot to put the sauerkraut in the casserole, it made a nice topping. I used bacon instead of pastrami.

Pumpkin Snickerdoodle Cookies

I love snickerdoodles. So when I came across this recipe, I flew to the kitchen to make it happen. I used pumpkin pie spice and sugar to roll my cookies, and I used a gluten-free flour mix of 4 cups brown rice flour and 2 cups tapioca starch for this recipe.
