I grew up eating fast food, mostly McDonald’s, Wendy’s, pizza, mac ‘n cheese, baked beans, and hot dogs. My favorite meal was chicken with mashed potatoes and green beans.
When I went to college, it was great to not cook food myself. But now that I’m on my own, how do I do it? Can I be vegetarian too? I learned to make bread and played with rye and barley flours. I’m better at baking than cooking.
And then there is the added challenge of having a lactose-free diet for two weeks, followed by two weeks of a gluten-free diet, per doctor’s orders.
I don’t want to starve.
So I got gluten-free cookbooks from the library and researched recipes online. Already I am overwhelmed by the different flour substitutes.
